Bacon Weave Smoked Ham

Sick and tired of the same old boring Ham? Add a beautiful bacon weave and you have just created a thing of beauty. This recipe is so simple but will make any ham dinner seem like a special occasion.


 

Ingredients

1 Spiral Sliced Cooked Ham

1 glaze packet (should come with ham)

1 Lbs. of regular cut Bacon


 

Directions

-Preheat pellet grill to 275 degrees. We like to use Applewood pellets for this cook.

The Weave

-Create a bacon weave that is 5 strips wide by 5 strips long.

-Start by laying 5 pieces of bacon edge to edge on a peice of wax/parchment paper.

-Next, peel back the edge of the second and forth slices of bacon and lay a slice of bacon over the first, third and fifth slices.

-Replace the second and forth slices so they are now laying over the slice you just layed down.

-Peel back the first, third and fifth slices in the opposite direction.

-Lay a new slice over the second and forth slices.

-Replace the first, third and fifth slices to lay on top of the slice you just placed.

-Repeat these steps until five slices have been woven.


 

-Lay the bacon weave over the Ham by gently picking up wax/parchment paper and rolling it over Ham. -Remove the paper and place on the smoker. -If you have a wire rack it is helpful to place the ham on it to make placing and removing from grill easier.


-Cook the ham at 275 degrees for 15 minutes per pound. Our ham was 10.25 Lbs. and we smoked ours for a total of 2 1/2 hours.

-With 30 minutes remaining, turn grill up to 375 degrees to crisp the bacon.


-For the final 10 minutes, mix the glaze and pour all over bacon weave and ham.

-Let the glaze caramelize and remove from the grill.

When turning up the heat to let the bacon crisp, make sure you give this enough time to happen. No one likes soggy bacon unless you are a weirdo.
