Brazilian Cheese Puffs

If you have never experienced a Brazilian Cheese Puff in your life, you need to make this recipe asap. They are so easy and soooo delicious! Make these little puffs of heaven in under 30 minutes. They go well with most anything but they par very well with red meat. To give them a little different flavor we added some garlic infused olive oil and of course we cooked them on the Traeger. We will warn you that they go down very easy and you might ruin your diet with these golden nuggets in your home.


 

Ingredients

175g Reduced Fat Milk

75g Extra Virgin Olive Oil (Optional- Use 15g Garlic infused Olive Oil in place of 15g EVOO)

1 Egg (49g)

85g Oaxaca Cheese or any cheese that melts easily

216g Tapioca Flour

9g Salt

 

Directions

Total Time - 30 minutes

-Preheat your pellet grill to 400 degrees.

-While your grill is heating, combine all the ingredients in a blender.

-Blend by pulsating the mixture. We do not want to over blend.



-Lightly oil a mini muffin size tin and fill the tin almost to the top of each muffin spot. The tin we used had 24 muffin spots and we were able to fill 23 of the with batter.



-Place the muffin tin in the grill and bake for 18 to 20 minutes or until golden brown.



-Remove from the muffin tin and enjoy!
