Easy Chicken Brine

Bring your poultry to life with this easy brine. Yes, it is one more step to making a dish but how many times have you had dry bland chicken breast and said never again? Here is your solution!

You can use this brine on smaller cuts of chicken breast as well. Just follow the reduced ingredient list!

 

Ingredients

3/4 cup Kosher Salt (reduced 1/3 cup)

1/2 cup White Sugar (reduced 1/4 cup)

1/4 cup Black Pepper (reduced 2 Tbsp.)

1/4 cup Garlic Powder (reduced 2 Tbsp.)

1/4 Onion Powder (reduced 2 Tbsp.)

2 Bay Leaves (reduced 1 leaf)

10 cups Water (reduced 5 cups)

5 Lbs. of Ice (reduced refrigerate)


Directions

In a large pot, heat water (Do not boil). Add the rest of the ingredients and stir until salt is dissolved. Remove from heat. Place chicken in a water cooler (Igloo 5 gallon type). Add 2 Lbs. of ice. Pour in brine solution. Let the chicken soak for at least 4 hours and up to 24 hours. I recommend brining over night for best results. Check ice level every 6 hours and add ice as needed.
