Do you like chicken legs but hate all those tendons and that annoying extra little bone inside them? Lollipop Chicken is your answer. You cut out the tendons and that small bone to leave you with a glorious meat Lollipop! As a parent these are wonderful for children. Most of the time our boys want to eat the leg but never finish it because they don't like to eat around all those gross parts (tendons and bone). This has solved our problem and they eat it all because it has a cool name and it only has the good stuff. Very simple to make and inexpensive too, you will love these any day of the week.

Prepare the chicken (see video below)
Lightly season the chicken legs with your favorite BBQ chicken rub. We like to use a light coat of salt, pepper , garlic and paprika but feel free to use what seasoning you like best. Too much seasoning will make the chicken salty and over the meat so be careful.
Place the chicken legs in an aluminum pan standing straight up.
After seasoning, let the chicken sweat while you pre heat your pellet grill.
Preheat your pellet grill to 300 degrees. We like to use applewood pellets for this cook.
When your grill has reached temperature, place the chicken in the grill and cook for 1 1/2 hours or until the internal temperature reads 165 degrees.
When your chicken is almost to temperature, preheat your BBQ sauce to a warm but not hot temperature. This will allow the sauce to coat the chicken evenly and not be a big glob.
When the temperature hits 165, remove the legs and dip into the warm BBQ sauce to coat.
Place the dipped legs back into the pan and cook for an additional 15 to 30 minutes just until the sauce becomes tacky and is set.
Remove from the grill and serve immediately.
